Suash Casserole
12 small yellow squash, cutin 1 inch cubes, 1 bunch green onions, 2 t. butter, 1 can cream of celery soup, 2 whole eggs, 1/3 cup bread crumbs, 1 T. worcestershire sauce, salt and pepper, grated cheese & cracker crumbs mixed with butter.
Par-boil squash in salted water just until tender. Drain and set aside. Saute green onion tops {use the long stems for garnish} in butter. When soft, remove from heat and stir in celery soup. Add eggs, bread crumbs and seasonings. Combine with drained squash. Put in a buttered casserole and cover with grated cheese and additional bread crumbs or cracker crumbs kneaded with butter. Bake at 375 degrees for 30 to 45 minutes.
