Project Worth Participant's Gardens through Photos

Hello everyone. Yesterday I thought that we've had about a week of dry weather in Menifee County, Kentucky so I suppose it is time for some rain and sure enough when I got up this morning it was raining.  That's about par for Kentucky weather.  In the last week I have been informed and have seen lots of good gardening work going on here in the county.  We have a meeting schedule for tonight, Monday June 11, and I am expecting to hear more than a few good reports about our participants garden progress.  At least I hope so.  Last Friday, June 8, I made a few visits to some of our participants garden sites.  I have decide to show some of thes sites through photos that I took on Friday.  These sites range from just starting to grow to well on their way.  I hope you enjoy these photos.

These photos only represent a fraction of our familes.  After our meeting on Monday I hope to have more information on how much, if any, produce has been harvested.  Please find this week's recipe below.  I hope everyone has a great week for gardening.


Suash Casserole

12 small yellow squash, cutin 1 inch cubes, 1 bunch green onions, 2 t. butter, 1 can cream of celery soup, 2 whole eggs, 1/3 cup bread crumbs, 1 T. worcestershire sauce, salt and pepper, grated cheese & cracker crumbs mixed with butter.

Par-boil squash in salted water just until tender.  Drain and set aside.  Saute green onion tops {use the long stems for garnish} in butter.  When soft, remove from heat and stir in celery soup.  Add eggs, bread crumbs and seasonings.  Combine with drained squash.  Put in a buttered casserole and cover with grated cheese and additional bread crumbs or cracker crumbs kneaded with butter.  Bake at 375 degrees for 30 to 45 minutes.
