A GREAT WEEK AT PROJECT WORTH OUTREACH

Hello everyone.  My name is Alex Sanders and I am with Project Worth Outreach in Menifee County, Ky.  It has been a good week.  We finally received rain on two seperate occasions.  We had a film crew on site and traveled to London, Ky. to meet John Paul Dejoria.

This week we received much needed rain for our gardens on Tuesday and Friday.  Hopefully, this rain will cause our gardens to start growing again and produce lots of vegetables.  Our participants were extremely excited about the much needed rain.

On Wednesday we were really excited to host Constance, David Cooke and the Grow Appalachia film crew, Christy and Turk.  We had several conversations about our Raised, Community and Individual gardens.  They viewed our raised and Community gardens which are on site.  We took them to a couple of our Participant's garden sites and walked through them as they commented on the different aspects of each garden.

On Thursaday we were delighted to travel to London, Ky. to meet John Paul Dejoria.  What a great treat this was for my wife and myself.  The man is such an inspiration.  He truly beleives in the Grow Appalachia Gardening Project.  While there we enjoyed some really good food and it was great to see people that I met in February at Berea College.  It appeared to me that everyone there was having a good time and were enjoying the company and conservations of the Grow Appalachia partners.  Thanks to all who made this an enjoyable event.

Please find below this week's recipe.
Country Casserole

1/2 lb ground beef
1/2 cup chopped onion
1/3 cup diced green pepper
1 {16 oz can pork and beans}
2 cup cooked elbow macaroni
1/2 cup tomato juice
1/2 tsp salt
1 slice {about 1 oz sharp process cheese, cut in 4 triangles}

In skillet brown beef and cook onion with green pepper until tender.  Stir to separate meat.  Pour off fat.  Add beans, macaroni, juice and salt.  Pour into 1-quart casserole.  Bake at 400 degrees for 25 minutes or until hot.  Stir it up.  Top with cheese.  Bake 5 minutes more or until cheese melts.  Makes about 4 cups.
Note:  I submit these recipes as they are given to me.  Please feel free to substitute healthy ingredients whenever possible.
